Weird food allergy?

Ok, my brother is allergic to cream cheese and sour cream, but can eat any other kind of cheese/milk product. His allergy is severe enough to those 2 items to hospitalize him with just one bite.

I know how cream cheese is made and it is the same as almost every other type of cheese he eats. The difference is in how long it ages, how dry it is, etc. So how can he only be allergic to one type of cheese and not others? I don't doubt his allergy, just trying to understand it so that I can make sure I never feed him something that will make him sick.

Different cheeses also use different bacteria or molds in the process of coagulating the milk - it may be this part of the cheese your brother is allergic to? Does he have any other environmental allergies to dust or molds?

a very simple article on cheese:

I guess it can be quite hard to second guess which milk related product is okay with him or not. He should check with his allergist what is the specific component he is allergic to.
Without an accurate understanding of this, it is almost impossible for him to eat dairy products for fear of making the wrong decision.
