There is nothing special about carrots -- its most important to eat 7-10 servings of fruit and veggies daily, eat fatty fish twice a week and limit red meat to 2 a week. Eat foods higher in fibre and carbs, limit protein. Surprisingly absent from this (rather silly) "celebration of the carrot" is the fact that raw carrots are a completely worthless source of nutrients for humans (who only have one stomach). They need to be well-cooked to yield any health benefit (aside from "roughage") whatsoever! |
