what sort of different physical therapy would i need at different stages of recovery for the various muscles at the elbow to ensure strength and stability

It depends on how bad the ligament tear is. If it is completely torn, then surgery is most likely going to be necessary. For minor sprains, just make sure you use ice in the acute phase. It may also help to wrap it with an ace bandage to keep the elbow more stable while it is healing (although you don't want to wear it all the time; just when you're doing activites that tend to hurt the elbow). Ligaments often take several weeks to heal due to their lack of blood supply; sometimes they can even take up to a full year to heal (depending on how bad the damage was, the age of the person, and if they keep reinjuring it). If the arm has become immobilized for a long time (such as wearing a sling), you will probably need to exercise the muscles of the arm and shoulder as they may have atrophied a little.
