Diabetic recipes?


I would like to get any diabetic recipes you might have nothing for like meals for muffins cookies bread or snacks. I have a young brother that would love so different things to eat. Also i would like a diabetic recipe for the bread maker if anyone has one

Just wantted to make a note using real sugar reallly jumps him numbers so i am hoping to get recipes with slpenda or other brand of sugar

Here are a few recipes taken from a Diabetic Cookbook of mine.
"Blueberry Muffins"
1-1/3 c. all-purpose flour
1c.quick-cooking oats,uncooked
1/4c. Splenda brown sugar substitute
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 c. skim milk or 1%milk
2 large egg whites
3TBsp. canola or vegetable oil
1c. fresh or frozen blueberries, thawed,drain
non-stick cooking spray
1.Preheat oven to 425* Coat a regular size muffin pan with cooking spray.
2.Mix all ingredients together in a medium bowl,stir
gently just until blended.Don't overmix.Muffins will be tough.Gently fold in blueberries."Will be Lumpy
3.Spoon batter into muffin pan,filling each cup about 3/4 full. Bake for 25 mins. or until golden.
Makes 1 dozen.

"Double Chocolate Brownies"
6 TBsp.margarine,(stick)softened
1/2 c. Unsweetened applesauce
2 large eggs
1 tsp. vanilla extract
3/4 c. all-purpose flour
1 c. Splenda Blend
1/2 c. semisweet chocolate chips OR mini
chocolate chips
6 TBsp.Unsweetened cocoa powder
1tsp. baking powder
1/4 tsp. salt

1.Preheat oven to 350* & coat a 8x8-inch baking pan with cooking spray.
2.In a large mixing bowl beat margarine applesauce eggs & vanilla until well blended.
3.Now,stir in flour,Splenda,chocolate chips,cocoa
baking powder & salt until blended.
4.Spread batter in baking pan.Bake for 18-20 min
or until top springs back when gently touched. Cool completey. Cut into 16 squares. store in air
tight container at room temperature.Makes 16 Brownies. 1 Brownie =105 Calories

"Oatmeal Chocolate Chip Cookies"
1- 1/2c. quick- cooking oats
3/4 c. all-purpose flour
1/2 tsp. baking powder
1/8 tsp. salt
1/2 c. Light margarine(stick)
1/3 c.Splenda brown sugar substitute
2 large egg whites
4 tsp regular Splenda
1 -1/4 tsp. vanilla extract
1/3 c. mini semisweet chocolate chips
1.Preheat oven to 375* & spray a cookie sheet with non-stick cooking spray.
2.In a medium bowl,combine the oats,flour,baking powder, & salt; set aside.
3.In a large bowl,mix the margarine,Splenda brown sugar substitute,regularSplenda,egg whites
and vanilla extract with a electric mixer.Stir in the dry ingredients until well blended. then add the chocolate chips.
4.Drop the dough by rounded teaspoonfuls onto cookie sheet. Bake for 8-10 mins. or until lightly browned. Cool on a wire rack.
Makes 3 dozen cookies
1Serving size= 2 cookies & 100 Calories

People with diabetes can eat anything in this world.
All we have to do is count our carbs ,balance portion sizes and use exercise and medication properly.

Many people make a lot of money off of " diabetic cook books ", when they are not necessary.Many such books recommend less fat and salt and sugar.Not all people with diabetes require such restrictions.

A normal balanced diet works just fine.

you can eat what you want but must count your carbs and always read labels and us sweetners
