Why do doctors worry about dehydration if a person, expecially an infant, has severe diahrrhea lasting several days.

if you are dehydrated, you can die, it can cause medical complications.... severe diahrhea will cause dehydration, your body needs fluids to survive...

dehydration affects all areas of the body from the blood vessels to the brain. In younger children as in older adults(75+) the ability to control your own body temperature is also an issue. severe dehydration can lead to death as well as many other complications including kidney failure, and seizures.
The best way to avoid this problem in the very young and elderly is to offer small amounts of fluid (approx 50mils) every 15 mins. this may not sound like a lot but when added up total more than the body needs in a given day.

For ill or malnourished individuals (In your case babies) diarrhea can lead to severe dehydration and can become life-threatening without treatment.

The patient NEEDS to consume adequate amounts of water to replace that loss, preferably mixed with electrolytes to provide essential salts and some amount of nutrients.

You can die very easily from dehydration. Your kidneys can shut down, you can have a heart attack, your blood pressure goes down from decreased plasma volume, body temperature goes up because of the reduction in sweating, dizziness, fainting, delirium and unconsciousness. This can all be caused by an insufficient volume of water. And when it comes to infants especially when they have diarrhea they lose fluid faster, and the above things happen faster. Losses of 15% of water are usually fatal.
